Knickerbocker Glory
A classic Knickerbocker Glory recipe using Bradwell’s vanilla ice cream, jelly, peaches and pineapple, cream, ice-cream, nuts and strawberries.
Ingredients
Serves 6
1 pkt raspberry jelly
200g canned peaches, drained
200g canned pineapple chunks, drained
150ml fresh double cream,
2 tsp icing sugar
1 litre Bradwell’s vanilla ice cream
50 chopped mixed nuts
Chocolate pouring sauce to serve
Handful of fresh strawberries to decorate
1. Make the jelly according to the directions on the packet. Leave until set.
2. Chop the canned fruit and mix together.
3. Whip the cream until stiff, and sweeten with the sugar.
4. Chop the set jelly with a fork until well broken up.
5. Put 1 tbsp of fruit in each of 6 sundae glasses or tall wine glasses
6. Cover with tablespoon jelly, add a scoop of ice cream, and a spoon of cream
7. Repeat the process
8. Sprinkle with the chopped nuts, and pipe a rose of whipped cream on top.
9. Decorate each portion with chopped strawberries

Tropical Smoothie

Makes enough for 4 glasses
300ml pineapple juice
100g over-ripe pineapple
2 large scoops Bradwell’s vanilla ice-cream
125ml Coconut milk
Instructions
Blend all the ingredients together until smooth.

Pour the drink into a glass and serve.
